A Six-Course Tasting Menu
- Cold Smoked Chicken – Roasted kelp braised peanuts, Nashi pear, Tibicos crudo with calamansi granita, smoked oxtail consommé, coriander pickled mustard green
- Confit Leeks – Sweet aromatic soy sauce
- Braised Napa Cabbage Dumplings – Wild mushrooms, okara, koji butter
- Masa Scallion Pancake – Beef tongue, Chintextle XO
- Hudson Valley Duck – Congee, lacto-fermented choy rabe, grilled alliums

About the Chefs
Efrén Hernández, a 2024/2025 James Beard nominee, leads the kitchens at Casa Susanna and Rivertown Tavern. His cuisine is a reflection of his Mexican heritage, infused with technical expertise and inspiration from the Hudson Valley.
Jocelyn Ueng, a Taiwanese-Chinese American chef, brings a global perspective shaped by her travels to over 45 countries. With experience at renowned restaurants like The French Laundry, Satoyama Jujo, and Noma, she specializes in micro-seasonality, foraging, fermentation, and preservation. Jocelyn is currently developing her own restaurant, set to open in Spring 2026.
